Chicken Massaman Number 1 Thai Food

Massaman is the most delicious Thai food and was voted best food in the world in 2011! I love the spice and flavour so much, I came up with my own recipe. You can easily cook this at home. 🙂

Ingredients (Massaman Paste)
Black pepper 1 tsp.
Coriander seeds 1 tsp.
Cumin 1 tsp.
Salt 1/2 tsp.
Clove 3 cloves.
Chopped lemongrass 1 stalk.
Shallot 3 shallots.
Garlic 3-4 cloves.
Soaked red dried chili 1 handful.
Shrimp paste 1 tsp.

Ingredients (Massaman Curry)
Massaman paste 1-2 tbsps.
Cooking oil (for paste) 1 tbsp.
Coconut milk 500 ml.
Cubed potatoes 1 onion.
Sliced Onion 1 onion.
Chicken thigh 300 g.
Roasted peanuts 1 tbsp.
Cinnamon 1-2 cinnamons.
Cardamom 3-4 cardamoms.
Bay leave 2 leaves.
Fish sauce 1 tbsp.
Palm sugar 1-2 tbsps.
Tamarind paste 1 tbsp.

Instructions
Heat up the wok, add a bit of oil, then add “Massaman paste” and stir fried it for 10 seconds.
Add coconut milk about half of a cup, mix it all up.
Then put all the cubed potatoes, sliced onion into the wok until it’s done!
After that, add more coconut milk and follow by with chicken.
Once the chicken has done, add all the spices (cinnamon, cardamom, bay leaves) including roasted peanuts.
Leave it on low-heat, slow cook for another 45-60 minutes, keep stirring it every 5 minutes until everything cooked and tender, and the curry itself is thick.
Lastly, add fish sauce, palm sugar, tamarind sauce (more milk if you want to).
Plate and serve.
