Ingredients
Rice noodles 100 – 150 g.
Egg 1 egg.
Pork 30 g.
Bean sprouts 1 handful.
Chinese kale 20 g.
Green onion 20 g.
Lime 1 piece of lime.
Ingredients (sauce)
Vegetable oil 3 tbsps.
Tamarind paste 3 tbsps.
Palm sugar 1 tbsps.
fish sauce 1 tbsp.
Fermented bean sauce 1 tbsp.
Black soy sauce 1 tbsp.
Shallot 3-4 shallots.
Garlic 1-2 cloves.
Chili powder 2 tsps.
Instructions
Make the sauce first by put oil, tamarind paste, palm sugar, fish sauce, fermented bean sauce and black soy sauce. Mix well until combined then add minced garlic, minced shallot and chili powder.
Heat up the wok, pour all the sauce mixed, follow by pork, rice noodles. Stir fry for 5 minutes.
Add bean sprouts, Chinese kale and green onion and mix it up again.
Let them sit a little, then create a little well in the middle, crack the egg and pour it right in the little well. Leave it until the egg is cooked, then serve with lime.
