Tom Zaab
Ingredients
Galangal 4-5 pieces.
Lemongrass 2 stalks.
Kaffir Lime Leave 5 leaves.
Shallot 2-3 shallots.
Grilled pork 80 g.
Tomato 1 tomato.
Saw Coriander 1-2 stalks.
Fish Sauce 3 tbsps.
Lime Juice 1-2 tbsps.
Tamarind Paste 1 tbsp.
Sugar 1/2 tsp.
Chili flake 1 tsp.
Bird eyes chili 2-3 chilis
Sweet basil leaves
Broth or water 1 cup.
Instructions
Heat up the pot, pour the water or broth into it with the low heat, then add galangal, lemongrass, kaffir lime leave and shallot. Leave it for 5 minutes.
Add tomato, grilled pork. Then all the seasonings ; fish sauce, sugar, tamarind paste, lime juice, fresh chili and chili flake. Mix well.
Leave it on low heat for another 5 minutes, add chopped fresh saw coriander and give it a good mix.
Serve hot, garnish with some sweet basil leaves.
