Ingredients (paste)
Garlic 3-4 cloves.
Shallot 3-4 shallots.
Thai green chili 10-15 chilis.
Thai bird eyes chili (green) 10-15 chilis.
Coriander root 1-2 roots.
Kaffir lime zest 1/2 tsp.
Lemongrass 1 stalk.
Galangal 1 tbsp.
Cumin 1 tsp.
Black pepper 1 tsp.
Coriander seed 1 tsp.
Salt 1 tsp.
Shrimp paste 1 tsp.
* Chili leave to make it more green *

Blend all these ingredients until it is all combined.

Ingredients (green curry)
Green curry paste 1-2 tbsps.
Vegetable oil 1-2 tbsps.
Chicken 150-200 g.
Coconut milk 150 ml.
Palm sugar 1-2 tsps.
Fish sauce 1 tbsp.
Sweet basil 1 handful.
Kaffie lime leave 2-3 leaves.
Sweet eggplant 2 eggplants.
Sliced red chili (garnish)

Instructions
Pre heat the pot, add a bit of oil, follow by the paste – fry it a little for better aroma.
Then add coconut milk, sweet eggplant.
After that add the meat and all seasonings ; fish sauce and fish sauce.
Put sweet basil into the pot, give it a good mix one more time and serve hot with a sliced red chili on top as a garnish.
