AEB
“Aeb ” is a local Northern food that is very very easy to find. If you come to the north of Thailand whether Chiang Mai, Chiang Rai, Lamphun, Mae Hong Son, wherever you are in the north. It’s usually available for sale almost everywhere.
Ingredietns (for Aeb)
Minced pork 100 g.
Egg 1 egg.
Kaffir lime leave 1 tsp.
Sweet basil leave 10-20 leaves.
Coriander and Green onion
Banana leave (as a container)
Ingredients (for paste)
Dried chili 5-8 chilies.
Garlic 4 cloves.
Shallot 2-3 shallots.
Lemongrass 1 tbsp.
Galangal 1/2 tbsp.
Turmeric 1/2 tbsp.
Salt 1/2 tsp.
Shrimp paste 1 tsp.
Instructions
Make the paste first by add all the ingredients (paste) into the mortar, mash it well.
Put the paste into the mixing bowl, add pork, egg, kaffir lime leave and mix it well.
Make a container, by put the banana leave over the heat just to become a foldable leave. Then start to create a little bowl by it.
Lay some sweet basil leave at the bottom, then pork mixed then wrap it properly.
Grill the whole things over the charcoal grill for 15-20 minutes, then serve.
